One of my favorite fruits is fig, preferably fresh, but dried figs are pretty good too. Figs are rich in nutrients and also relatively low in calories. This makes them a great addition to a healthy diet. They are also amazing for keeping your energy up during a hike. This delicious no-baked fig and date energy balls combines the two nutritious fruits, date and fig, to help keep you going through your adventures.


Ingredients:
Prep time: 10 Min
- 2 cups of dried figs
- 1/4 cup of pitted Medjool dates
- 2 tsp of honey or agave syrup
- 1 cups of chopped almonds (raw or roasted)
- 1/4 cup of pumpkin seeds, chopped.
- a pinch of salt


Recipe:
- Combine dates, figs and salt in a food processor, puree until it turns into a paste.
- Pour the mixture into a mixing bowl
- Add chopped almonds and pumpkin seeds into the mixture. Mix well.
- Roll the mixture into bite size balls


Tips & Tricks:
- If you put the mixture into the fridge for about 1 hour before rolling, it will make the process a lot easier and less sticky.
- If you have a cookie scoop, it will help you form the shape better.
- You can store these wonderful fig and date energy balls for up to a week or so in the fridge or freeze them for up to 3 months.
