How to Make Delicious Fig and Date Energy Balls

One of my favorite fruits is fig, preferably fresh, but dried figs are pretty good too. Figs are rich in nutrients and also relatively low in calories. This makes them a great addition to a healthy diet. They are also amazing for keeping your energy up during a hike. This delicious no-baked fig and date energy balls combines the two nutritious fruits, date and fig, to help keep you going through your adventures.

Ingredients:

Prep time: 10 Min

  • 2 cups of dried figs
  • 1/4 cup of pitted Medjool dates
  • 2 tsp of honey or agave syrup
  • 1 cups of chopped almonds (raw or roasted)
  • 1/4 cup of pumpkin seeds, chopped.
  • a pinch of salt

Recipe:

  1. Combine dates, figs and salt in a food processor, puree until it turns into a paste.
  2. Pour the mixture into a mixing bowl
  3. Add chopped almonds and pumpkin seeds into the mixture. Mix well.
  4. Roll the mixture into bite size balls

Tips & Tricks:

  • If you put the mixture into the fridge for about 1 hour before rolling, it will make the process a lot easier and less sticky.
  • If you have a cookie scoop, it will help you form the shape better.
  • You can store these wonderful fig and date energy balls for up to a week or so in the fridge or freeze them for up to 3 months.
