I LOVE easy-to-make snacks, especially healthy ones. Our challenge is to find healthy snacks that not only filling, provide tons of energy but also packable and won’t get spoiled too easily. So if you are in the same boat, here is a simple recipe for this delicious no bake date energy bars. I hope you enjoy it!
Ingredients:
Prep time: 10 Min
- 2 cups of Medjool dates (about 24 dates)
- 1/2 cup of roasted cashew
- 1 cup of almonds (preferably roasted but you can use raw almonds)
- 1/2 cup of pumpkin seed
- 1/2 cup of shredded coconut
- 1 pinch of salt
Optional: Extra shredded coconut and whole pumpkin seeds for decoration
Recipe:
- Use a food processor to chop almonds, cashew nuts, and pumpkin seeds to your desired consistency. We prefer it a bit toward the chunkier side. Pour the chopped nuts out in a big mixing bowl.
- Puree dates until it turns into a paste.
- Add the pureed date into the nut mixture, along with salt, and shredded coconut. Mix well.
- Pour the mixture into a lined baking dish to form the shape (I use parchment paper).
- If you prefer, you can also add whole pumpkin seeds and shredded coconut on top for decoration.
- Put the mixture in the refrigerator for about an hour so it firms up. This will make cutting it into little bars a lot easier.
Storage:
You can store these wonderful no bake date energy bars for up to a week or so in the fridge or freeze them for up to 3 months.
