Let me introduce you to this super easy, only 5 ingredients snack. These almond and cranberry energy balls are not only healthy and packed full of energy, but they are super yummy too. If you’re not a big fan of sweet stuffs like I am, you’ll love this one. Of course, you can also add sweetener of you want that extra sugar.
Ingredients:
Prep time: 10 Min
- 14 oz or 2 cups of almond butter
- 1 cup of almond, chopped
- 1 cup of pumpkin seeds. You can chop these if you like a finer texture.
- 1 cup of dried cranberries
- 1 cup of shredded coconut
Optional: sweetener such as agave syrup or honey if you want it to be sweeter. Add to taste.
Recipe:
- Chop almonds and pumpkin seeds to desired texture. You can use a food processor for this.
- Add the nut mixture, along with almond butter and dried cranberries into a mixing bowl. Mix well. (Add your sweetener to taste if you prefer them sweeter)
- Roll the mixture into bite size balls.
- Roll these almond and cranberry energy balls through shredded coconut.
Tips & Tricks:
- Use cookie scoop to form shape and create even portion.
- To roll these balls easier, put the mixture in the fridge for about 1 hour before rolling.
- You can store these wonderful almond and cranberry energy balls for up to a week or so in the fridge or freeze them for up to 3 months.
