Dustin has a sweet tooth, but I don’t really care for anything that is too sweet. Therefore, these apricot and date bars are perfect because not only they are naturally sweet, they are also easy to make, paleo, vegan and gluten-free. Also, because they don’t spoil that easily, these bars are the perfect little snack to bring on adventures, hikes, or simply to satisfy your sweet craving! We love these apricot and date bars and we hope you do too!
Ingredients:
Prep time: 10 Min
- 1 1/2 cups of pitted dates
- 2 cups of dried apricots
- 1 tsp of ground ginger or 1 TBS chopped fresh ginger
- 1 cup of roasted almonds
- 1/2 cup of cashews
Recipe:
- Roughly chop dried apricots and dates
- Put all ingredients into a food processor and pulse until you have the desired consistency. You may need to scrape down the sides.
- Line a square pan with parchment, wax paper, or plastic wrap. Pour mixture in the pan and pack tightly.
- Place pan in the fridge for about 30 mins to set. Cut into bars.
Tips & Tricks:
You can store these apricot and date bars for up to a week or so in the fridge or freeze them for up to 3 months.
