Easy No-bake Chocolate Cranberry Energy Balls

With us being very active, either traveling, hiking, or adventuring, healthy snacks always seemed hard to find. These amazing Chocolate Cranberry Energy Balls are not only healthy, delicious, very easy to make, they are also portable to pack on a long hike with you. They are easily made vegan by swapping honey with maple syrup and gluten-free with certified gluten-free oats. Below is the recipe for chocolate cranberry energy balls. INGREDIENTS:

 

  • 1/4 cup of semi-dark chocolate chips
  • 1/2 cup of old-fashioned oats. Use certified gluten-free oats for a gluten-free version.
  • 1/4 cup of cranberries
  • 1/3 cup of almond butter 
  • 2 TBS of chia seeds
  • 1/4 cup of maple syrup(vegan) or honey
  • 1 TBS of coconut oil

 

DIRECTIONS:

  1. Melt coconut oil in a large bowl
  2. Stir in almond butter, maple syrup (or honey) until smooth. 
  3. Add oats, chia seeds, cranberries, and chocolate chips
  4. Roll into little balls and store in the fridge for up to 1 week. 

*A cookie scoop helps pack all the ingredients together. It is also easier to roll if you have time to allow the ingredients to chill before rolling. 1 hour or so should be sufficient. If you don’t have time, slightly damp hands would help prevent the ingredients from sticking to your hands. 

 

STORAGE:

You can store these Chocolate Cranberry Energy Balls for up to a week or so in the fridge or freeze them for up to 3 months.
